The SpitJack Meat Carving Knife was designed primarily for slicing smoked BBQ brisket. After spending up to a hundred dollars and taking up to 16 hours to cook, you don’t want to spoil the results with a ragged presentation. Well-cooked brisket is tender and can pull apart easily if your knife is dull, or too short, or you cut at the wrong angle. Sometimes the meat can cling to the blade and that will be enough for the meat to tear while cutting.

The most important feature of any knife is its edge, and the GLOBAL edge is truly its signature.
